Tasting Notes
Colour:Deep red.
Nose:Wonderful Cabernet aromas of cassis and blood plums, with hints of bay leaf, graphite and a judicious amount of oak in background.
Palate:The medium bodied palate offers a distinct purity of fruit offering blackcurrant and pomegranate flavours with a touch of liquorice. Elegant and poised with the fleshy fruits and silky fine tannins culminating to a lingering Cabernet finish.

Conditions:We had a great summer leading up to vintage, although a rain event about a week or so before the start of harvest lead to some unusually humid conditions (for Margaret River at least). Careful fruit selection in some vineyards was required as a result of the humidity, despite experiencing good weather during the white harvest. The end of the whites saw a bit more rain, which was then followed by fine weather for the rest of March setting up the Cabernets nicely. In summary 2021 was a more challenging season than usual, however the extra work in the vineyard ultimately paid dividends with some wonderfully elegant wines being produced as a result.

Winemaking Notes:The one tonne parcel of fruit we harvested from the Birdcage block in 2021 was barely enough to make four barrels of wine. The fruit was crushed/destemmed and fermented small open fermenters for 6 days @ 24 – 28oC, during which the cap was managed by regular plunging by hand. The wine was gently pressed @ 2 Baume and finished ferment in tank after which it was matured in four French oak Barriques (one of which was new) for 14 months, prior to bottling.
