An intriguing expression of Sauvignon Blanc, bright fruit layered with complex textural elements which culminate in a crisp, dry, persistent finish. The lively palate is medium bodied offering tangy citrus characters and crunchy tropical fruits, layered with a bit of creaminess derived from lees stirring.

Tasting Notes
Colour:Pale straw with brilliant green hues.
Nose:This Sauvignon Blanc is vibrant and intensely aromatic. Lifted notes of passionfruit, gooseberry and freshly cut lime mingle with hints of white nectarine, elderflower and crushed herbs.
Palate:The wine is medium bodied with a fresh zesty palate and flavours of tropical fruits, lime zest, and grapefruit. A fine line of natural acidity drives the wine, providing freshness, precision and length. Crisp, refreshing and distinctly Margaret River, this Sauvignon Blanc finishes long with lingering citrus and mineral notes.
Cellaring:A ‘drink now’ style - best consumed while bright and youthful.

Winemaking Notes:Fruit was pressed without crushing. Majority (85%) was then cold settled, the racked juice then fermented at 15oC in stainless steel tanks using aromatic yeast strains to retain fresh varietal characteristics before being stirred and transferred to seasoned barrels after ferment. 15% of the blend was wild fermented on full solids in new French oak barriques to bring complexity into the blend. All of the different components were regularly lees stirred in barrel for 3 months, to add texture and mouth feel. The wine was then blended stabilised, filtered, and bottled without any fining.
