2023 Reserve Cabernet Sauvignon

The Reserve range continues to be the best of what we are able to produce in a given vintage - single vineyard or otherwise. Fruit was predominantly sourced from two mature, dry grown vineyards; Timber Creek, in the Wilyabrup subregion; and Victory Point in the Treeton subregion of Margaret River and was supplemented with a small amount of Malbec from our Stevens Road vineyard in Wallcliffe. The resulting blend from these vineyards has married beautifully, proving again that sometimes ‘the whole is greater than the sum of its parts’.

Tasting Notes

Colour:Deep red with purple hues
Nose:Intense blackcurrant pastilles, fresh mulberries and rose petal, framed by fine French oak with hints of cocoa and graphite in the background
Palate:Medium-full bodied, the palate offers a core of blue and black forest fruits, cassis, and satsuma plums. The wine has a wonderful depth of flavour with layers of plush fruits underpinned by dense, yet fine grained tannins. Quintessential Margaret River Cabernet; energetic, complex and refined, culminating in a persistent berry fruit finish.
Cellaring Potential:Vibrant, yet approachable in its youth, this wine will also certainly benefit from further bottle maturation and will cellar comfortably for over 10 years.

Viticulture

Winemaking

Alcohol:14%
Bottle Size:750ml
pH:3.44
Winemaking Notes:Fruit was crushed/destemmed before predominantly small batch fermentation in a combination of static and open fermenters. During fermentation the cap was managed using a combination of aerative pumping over and regular hand plunging. The wine was gently pressed at 2 Baumé and finished ferment and MLF in tank.

Our process is driven by a deep respect for the land, ensuring that we protect the integrity and potential of our region.
