We had a great summer leading up to vintage, although a rain event about a week or so before the start of harvest lead to some unusually humid conditions (for Margaret River at least). Careful fruit selection in some vineyards was required as a result of the humidity, despite experiencing good weather during the white harvest. The end of the whites saw a bit more rain, which was then followed by fine weather for the rest of March setting up the Cabernets nicely. In summary 2021 was a more challenging season than usual, however the extra work in the vineyard ultimately paid dividends with some wonderfully elegant wines being produced as a result. |

Ripe berry fruits, blackcurrants and plums are complimented by subtle spicy oak characters with hints of bay leaf and dried herb. |

A medium to full-bodied Cabernet with plenty of depth offering blackberries, cassis and a touch of mocha. The pristine fruit and fine tannins combine to produce a very complete wine, distinctly Cabernet with an elegant structure and a wonderful persistence of fruit. |

Vibrant and perfectly approachable in its youth, this wine will comfortably cellar for several years. |

The various batches of fruit were crushed and destemmed then fermented predominantly in static fermenters at 26oC for 5 – 7 days, during which the cap was managed using aerative pumping over for 7 days before gentle pressing. The components underwent MLF in tank followed by 14 months of maturation in a selection of French oak barriques (25% new) before the blend was assembled, filtered, and bottled without any fining. The 2021 Xanadu Vinework Cabernet Sauvignon is made from qualifying grapes at a winery certified by Sustainable Winegrowing Australia. |

Expect the usual cassis and mulberry flavours, wood spice and wintergreen, a bit more herbal this vintage, but everything in balance. Medium bodied at best, with grainy tannins and perky acidity throughout. Food is essential to enjoy it now, although more time in bottle is a good idea.
